"Switching Up the Technique"

Our earlier batches of Sorrel Hibiscus Cherry kept the cherries whole, giving them a juicy, flexible texture. However, in batch #shcb.004, we noticed two things: the texture felt too loose, and the balance leaned too heavily toward the cherries. The result reminded me more of fruit in syrup than a cohesive preserve with that perfect blend of fruit and jammy goodness.
With this batch, we decided to make a shift. This time, we pureed part of the cherries to create a smoother consistency while keeping some pieces whole for a satisfying bite. Our biggest concern? Preserving that striking, warm flavor of sorrel juice that’s essential to this recipe.
I think we achieved a great balance in this batch, but we’d love to hear your thoughts on this batch!
