Since the original batch, we’ve made minimal changes to this recipe—its undeniable complexity, unique qualities, and perfect balance speak for themselves. For this batch, however, our team decided to lightly toast the black sesame seeds, releasing their natural oils to add a richer, nutty depth and warm aroma. This subtle enhancement elevates the tropical blend of passion fruit and peach, creating a truly layered flavor experience that captures the essence of this preserve.

    “The OG Batch”

    Our first batch of Passion Fruit Peach Sesame was inspired by a few key ideas. We wanted something that put passion fruit at the forefront, capturing that bold, tropical flavor. Like with our other preserves, we aimed to connect Caribbean flavors with other well-loved combinations, like peach, but to elevate it with an unexpected twist.

    Adding black sesame seeds was an out-of-the-box idea that we embraced instantly. Visually, they complement the look of passion fruit pulp. Culturally, they allow us to honor our Chinese-Caribbean heritage, while culinarily, they bring a unique, sweet-savory balance that we think is irresistible.

    Trying the first batch was exciting, and while we loved it, we did notice that it came out a bit too sour due to the sugar and passion fruit ratio—a minor adjustment for our next round. Beyond that, it's one of the most interesting preserves I’ve tasted, and I’m thrilled with how it turned out. What do you think?

    “Minor Tweaks”

    For our second batch, we had a clear goal: keep the original idea but adjust the sourness. We carefully increased the sugar to find just the right balance. Fruits can be unpredictable—factors like seasonality, ripeness, and origin can all affect sweetness. So, for our Passion Fruit Peach Sesame preserve, we wanted to highlight the sour notes of passion fruit and the sweetness of ripe summer peaches, creating a preserve that was both sweet and tart without overpowering either flavor.

    The extra sugar softened the extreme sourness, and by enhancing the citrus, we allowed the passion fruit's tartness to shine without being overly sharp. The result? A preserve with a beautifully balanced, elegant taste that transports you across flavors from the tropics to Asia, the Middle East, and the American South. We’re thrilled with how it turned out and hope you love it as much as we do.
