"A Taste of the 2024 Winter Season"
Making Carnival Fruit Punch marmalade jam is such a pleasure, especially in winter when citrus is at its peak. Each batch brings the thrill of experimenting with different varieties, blending vibrant flavors, and adding that irresistible punchy zip to our preserves. For this batch, we're working with a beautiful combination of Tarocco blood oranges, Satsuma mandarins, and a splash of Persian lime, each adding its own unique character to the mix.
We love using blood oranges in this marmalade jam. Not only do they add a juicy, complex citrus flavor, but their deep red hue helps us capture that iconic fruit punch color. Winter is the perfect season for these hard-to-find beauties, and as the cold weather set in, we knew we had to make the most of it. Tarocco blood oranges are the sweetest among blood oranges, cultivated for centuries in Sicily and other Mediterranean-like climates. Their rind is semi-thick and yellow-orange, sometimes with a hint of pink blush, hiding a flesh that can range from pink to deep ruby red depending on the season's temperatures. Nearly seedless, juicy, and divided into delicate segments, their flavor has that unique, tangy hint of raspberry that really makes this preserve sing.
For added zest, we chose Satsuma mandarins from Rising C Ranches in California. Known for their “zipper-skin” that's easy to peel, Satsumas are small to medium in size with a smooth, often slightly rough rind. They're incredibly juicy, sweet, and just a touch tangy—a lovely contrast to the blood oranges. Satsumas originated in China but have been enjoyed in Japan for over 700 years.
To balance the sweetness and add a bright pop, we also incorporated Persian lime. Known for its intense aroma and tart, floral flavor, Persian lime elevates the blend, adding a layer of complexity that enhances both the blood orange and mandarin. Persian limes have a thinner, smoother rind and juicy, seedless flesh, bringing an extra layer of freshness to the marmalade. This slight acidity creates the perfect counterpoint to the richness of the other fruits, giving this batch a lively, refreshing twist that captures the essence of Carnival.
